![]() ![]() ![]() Scuttlebutt Brewing Company Homeport Blonde Both of these went surprisingly well with our dinner. The Gale Force IPA is 5.6% alcohol, with a hoppier smell and a malty flavor. The Homeport Blonde Ale is 4.6% alcohol, with a fruity nose and a clean, lemony taste. Since our dinner tonight included a couple of spicy dishes as well, we opted to crack open the two lighter offerings, the Homeport Blonde and the Gale Force IPA. ![]() In the spirit of American Craft Beer Week, we just had to give these a try! Scuttlebutt Brewing Company Gale Force IPA My visit to City Super today netted us the Homeport Blonde, Amber Ale and Gale Force IPA. They also offer a selection from fourteen different seasonal beers, including Weizenbock (doppelbock), Tripel 7 Belgian Style Ale, and 10 Below Ale (imperiel dunkelweiss). Scuttlebutt, under head brewer Matt Stromberg, currently has six beers in their everyday repertoire Homeport Blonde (Ale), Hefe Weizen, Amber Ale, Tell Tale Red, Gale Force IPA, and Porter. Scuttlebutt Brewing Company beers found in Taipei, Taiwan In the spirit of sustainability, all of their ingredients come from Washington and Oregon, and their spent grain goes back into the local agriculture to feed cattle in Washington. Founded by Phil and Cynthia “Scuttle” Barrett, their initial production was 170 barrels of three styles of beer, growing to production of over 20 different styles and almost 5000 barrels! In 2007, they moved from the waterfront to their current brewing location in Everett. Scuttlebutt Brewing Company has been around since 1996, with their roots on the Everett waterfront. Today, I found three offerings from Scuttlebutt Brewing Company of Everett, Washington. They also occasionally carry offerings from smaller breweries from Asia, Europe and North America. This past winter, City Super was my source for Abbaye des Rocs Bruin and Speciale Noel, as well as the 2007 Golden Carolus Cuvee van de Keizer and a number of other beers that are not typically found in Taiwan. I’m quickly realizing that City Super is THE place to go to find some interesting selections of craft beer to try! While waiting for our order to be ready, I stopped into City Super to pick up some items for tomorrow’s dinner, and decided to take a quick peek in the beer aisle. Like the honey we will declare the ingredient for all to know so people can enjoy it within their chosen lifestyle.Today being Monday, I made my weekly pilgrimage to the Sogo in Tienmu to pick up Din Tai Fung’s Xiao Long Bao for take-out dinner. We don't have a tangible recipe now but that may happen downstream in something like a Milkstout. We have discussed using milk sugar in a beer at some point. That being said there may be a day when we do employ honey as flavor component but I doubt that will happen anytime soon and we will declare it as an ingredient for all to know. It is also a difficult product to maintain consistency with and very expensive. I personally don't care for the flavor it provides and it can be a difficult ingredient to use. We also don't use any honey in our current recipes. ![]() We don't use isinglass anywhere in our processes but a cask keg in an outside account might be handled this way. It is traditional to add some isinglass to the keg several hours to a day before serving to ensure the beer is bright and clear. You may want to exercise caution when drinking a cask beer however. We do not use any fining agents in our products, instead we use Perlite as a filter media with the products we want to be clear/bright. We do offer some other products from time to time infused with a flavoring agent but I can't think of a time when we've used an animal product to do so. The Jalapeno 777 uses Jalapeno and Serrano peppers in the infusion and the 10 Below is spiced with molasses during the boil. The only beers that we have anything more than traditional ingredients are the Jalapeno 777 and the 10 Below. "At this time all of our fermented products are free from using any animal products and have been for nearly 15 years.
